Chicken in Red Wine French Style
Ingredients:

1 whole Chicken about 1 kg cut into 10 pieces, 4 slices of bacon, 1 tsp flour, 80 ml olive oil, 250 g carrots, 1 onion, 3 bay leaves, 1 tbsp chopped parsley, 180 g fresh mushrooms and Salt & black pepper

 

Marinate

1 bottle of red wine 750 ml, 1 onion, 2 mincd cloves garlic, 1 chopped carrot, 12 black pepper corns

 

Procedures:
  1. Boil marinated ingredients for 10-15 mins, set aside and let cool
  2. Add chicken pieces and half of the olive oil
  3. Cover & refrigerate for 3 hours or longer
  4. Remove chicken piece & strain
  5. Heat remaining olive oil,  brown chicken pieces & bacon slices
  6. Sprinkle flour on chicken & bacon and add remaining ingredients except mushrooms,  stir fry over medium heat for a few minutes
  7. Add marinate and bring to boil
  8. Simmer for 45 minutes
  9. Add mushrooms and continue to cook for 15 minutes
  10. Add chopped parsley, salt and black pepper to taste
