Diced Vegetarian Chicken with Cashew Nuts
Ingredients:

440 g vegetarian chicken, 40 g roasted cashew nuts, 4 dried mushrooms, pre-soaked and diced, ½ stem of celery, diced, ½ bamboo shoot, diced, ¼ each of a red, green , yellow pepper and bell pepper, diced, 1 tbsp olive oil, 1 tsp of chopped scallion, Salt to taste

Procedures:
  1. Stir fry mushroom with olive oil for 3 minutes
  2. Add vegetarian chicken and stir fry for 3 minutes
  3. Add peppers, celery and bamboo shoot and stir fry for minutes
  4. Add cashew nuts and stir fry for 3 minutes
  5. Add scallion and salt to taste
