Lotus Root & Lotus Seed Soup
Ingredients:

500g lotus root, 30g dried assorted beans, 30g dried lotus seeds, 30g dried red dates, 10 cups water, 2 pec dried orange peels, Brown sugar or salt to taste

Procedures:
  1. Cut lotus root into thick slices
  2. Remove the core of lotus seeds
  3. Remove the stone from red dates
  4. Soak lotus seeds and assorted dry beans for 2 hours, drain and discard water
  5. Soak dried orange peel until soft, scrap clean the inner side
  6. Cook all ingredients in high heat to bring to a boil
  7. Reduce to medium low heat and continue to cook for 1 ½ to 2 hours
  8. Season with salt or brown sugar to taste
