Mixed Vegetable Soup
Ingredients:

One each of potato, carrot, onion and Italian cucumber, 250g each of cauliflower and broccoli, 2 American celery sticks, 1 tsp dried basil, 2 cloves garlic, minced, 6 tsp olive oil, 3 Bay leaves, 3 liter water or chicken stock, Salt and black pepper to taste

Procedures:
  1. Wash vegetables and cut them into small cubes
  2. Put olive oil in a soup pot , in low/ medium heat fry garlic , onion , bay leaves, carrots & celery for few minutes.
  3. Add dried basil and fry for another 2 minutes.
  4. Add water or chicken stock , bring to the boil, add potato and cook until soft.
  5. Add broccoli, cauliflower and Italian cucumber and cook until soft.
  6. Add salt & pepper to taste.
