Mixed Vegetable Stew French Style
Ingredients:

600g egg plants, 300g tomato, 300g zucchini, 150g celery, 150g onion, 2 clove garlic, 50g parsley, 100ml olive oil and Salt & black pepper to taste

 

Procedures:
  1. Cut eggplants & celery into cubes
  2. Cut tomatoes into wedges
  3. Cut zucchini & onion into thick slices
  4. Chop garlic & parsley separately
  5. Heat olive oil in medium heat , add garlic
  6. Add all other vegetable with a little water, cook for about 6 – 8 minutes stir occasionally until tender
  7. Cover and simmer in low heat for another 10 minutes
  8. Add chopped parsley and season with salt & pepper to taste
