Roasted Rack of Lamb
Ingredients:

1 lamb rack (with 6 to 8 ribs), 2 tsp olive oil, 4 tsp Dijon mustard, 1 tsp dried rosemary, 1 minced clove garlic

Procedures:
  1. Mixed together the mustard, olive oil, rosemary & garlic
  2. Spread the mustard mixture on to the lamb rack
  3. Place lamb rack in preheated 220。C oven and roast for 8 minutes
  4. Reduce oven temperature to 180。C, continue to roast for 20 minutes for medium rare
  5. Remove lamb rack from oven, let cool for 10 minutes before serving
Note:

Roasting time may be adjusted according to personal taste from rare to well done, and thickness & weight of the lamb rack.
